Grading Red Pontiac Potatoes

    • 1). Check the potatoes to see if they can be labeled U.S. No. 1. According to the United States Department of Agriculture (USDA) grading standards, Red Pontiac potatoes must be no smaller than 1-7/8 inches in diameter, be firm, fairly clean and fairly well shaped; and be free from freezing, blackheart, late blight, southern bacterial wilt, wing rot, soft rot, wet breakdown, or damage from any other cause.

    • 2). Re-evaluate if the potatoes do not meet U.S. No. 1 standards. To make U.S. Commercial grade, potatoes must meet U.S. No. 1 specifications, except they may be dirty, damaged by russet scab or rhizoctonia, or have a higher occurance of defects.

    • 3). Re-evaluate if the potatoes do not meet U.S. Commercial grade standards. To meet U.S. No. 2 standards, Red Pontiac potatoes must not be seriously misshapen, must be free from freezing, blackheart, late blight, southern bacterial wilt, wing rot, soft rot, wet breakdown, or damage from any other cause. The potatoes must be no less than 1-1/2 inches in diameter.
