- 1). Loosen and remove the metal knob on the top of the William Bounds pepper mill by twisting it counterclockwise. Set the small knob on one of its flat edges so it does not roll away. Lift off the top section of the pepper mill and set it next to the knob.
- 2). Pour peppercorns into the opening in the top of the mill until they come within an inch of the rim. Replace the top of the mill by sliding it down over the threaded post. Screw the knob back onto the threaded post to secure the top.
- 3). Hold the top of the metal grinder with one hand and the base with the other and twist the two sections in different directions. Inspect the size of the pepper pieces that come out of the base of the pepper mill. Loosen the knob at the top of the mill to make the grind more coarse; tighten the knob to make the grind more fine.
- 4). Open the pepper mill to remove all the peppercorns for a thorough cleaning. Wipe all the exterior parts with a damp towel and set the knob and top aside. Wash the interior of the mill with liquid dish soap and a bottle brush before rinsing it thoroughly with water.
- 5). Wait for the pepper mill to air dry completely before refilling it with peppercorns. Store the filled grinder in a cool, dark and dry area to protect the flavor of the peppercorns.
