A word originating from the French word "melt," fondue is an 18th century Swiss creation. Most frequently prepared with a combination of gruyere and emmenthaler cheeses melted in a white wine, fondue is contained in an earthenware pot called a caquelon where it is heated at the table and served as a communal dish. Today there are many varieties of fondue, such as dessert fondues served with fruit for dipping, beef fondue and fondues made of vegetable broth.
