A word originating from the French word "melt," fondue is an 18th century Swiss creation. Most frequently prepared with a combination of gruyere and emmenthaler cheeses melted in a white wine, fondue is contained in an earthenware pot called a caquelon where it is heated at the table and served as a communal dish. Today there are many varieties of fondue, such as dessert fondues served with fruit for dipping, beef fondue and fondues made of vegetable broth. - A restaurant specializing in fondue, The Melting Pot opened its first location in Florida in 1975 and continues to expand nationwide. As of 2010, the restaurant had 145 locations, including one in Seattle, that aim to bring the unique experience of eating fondue together with an upscale ambiance. Diners at The Melting Pot include four fondue courses with an array of wines and private tables available.
