Cookware Problems With Candy

    Burning

    • Any sugar-based candy can burn. Once even a small portion of the candy burns, the entire batch will be ruined. Use good-quality cookware to ensure even candy cooking and stir with a silicon spatula to prevent burning.

    Sticking

    • Apply a coat of cooking spray to the pot before using it to prevent sticking. Even if you cook your candy at the right temperature, it can stick to the pan if you don't remove it quickly. Once your candy has reached the optimal temperature for the recipe you are using, pour it into a mold or the final container right away. Otherwise it will stick to the pan.

    Setting Up

    • Hard candies like lollipops will only set up if the candy mixture reaches the proper temperature. The required temperature will be listed in the candy recipe you are using; use a candy thermometer to check your mixture. Some types of cookware may prevent the candy from reaching the proper temperature. If you are having trouble, try a different pan.
