This marinade can be used on practically any kind of meat or in any Mexican-style dish. The lime and cilantro flavor blend well together and is not too overpowering.

Ingredients
  • 1/3 cup white vinegar
  • 1/3 cup vegetable oil
  • 1/3 cup fresh cilantro, chopped
  • 1/4 cup water
  • 3 cloves garlic, minced
  • juice of 1 lime
  • 1 tablespoon cumin
  • 1 tablespoon dried  Mexican oregano
  • 1 tablespoon sea salt
  • 2 teaspoons mild chili powder
  • 2 teaspoons black pepper
  • 1 teaspoon ancho chili powder

  • Prep Time: 15 minutes
  • Cook Time: 0 minutes


  • Total Time: 15 minutes
  • Yield: Makes about 2 cups


Preparation

Combine all ingredients and store in a plastic container with a lid. Store in the refrigerator for up to 5 days after preparation.
Marinate beef, lamb and pork for about 6 hours, poultry for 4 hours and fish for 30 minutes to 1 hour.
