- The fridge must be 40 degrees F or below for proper operation. There should be no open meat packs, especially above other foods like vegetables. Alcohol should not be in refrigerators that are used for daycare purposes.
- Floors should be clean with no food particles or debris. There should also be no accumulation of moisture, grease or other liquids that could trap bacteria or cause an accident.
- Ovens and other cooking surfaces should also be clean of food and debris. Gas ovens should have a fully functioning gas line free of tears or leaks. A functioning fire extinguisher should be within reach.
- Countertops and other food preparation surfaces should be immediately cleaned once the food is prepared. A 5 percent bleach solution mixed with water could kill any remaining surface bacteria.
- Doors, cabinets and their handles must be clean from dirt and debris. Visible food and stains can harbor bacteria that can be easily passed on to everyone who opens the cabinets and doors.
