- Create a taste test, replacing yogurt for more caloric and high-fat ingredients in dips, salads, dressings and other foods. Make an avocado dip, salad dressing, potato topping and use yogurt as a partial substitute for oil and margarine in baked goods. Chart people's reactions, showing how many people were able to taste the difference, and how many people felt that the yogurt substitution created as good, if not better, recipes. Finish the project by comparing the calorie content and fat content of each dish when using the yogurt and with its higher-fat counterpart.
- Investigate the fermentation process by making your own yogurt. Try different yogurt products as starter cultures, including plain yogurt, yogurt with different fat contents, soured yogurt, flavored yogurt and yogurt that you have stored at different temperatures to test which factors facilitate the fermentation process. Record your yogurt-making attempts when you use sterile utensils and unsterile utensils, keeping all other variables the same. Try making yogurt when you completely boil the milk beforehand and when you heat up the milk but don't let it boil. Vary each step of the yogurt-making process to demonstrate the factors needed to make yogurt. (To make yogurt, boil milk and let it stand until it becomes lukewarm. Mix a tablespoon of yogurt into the warm milk and pour it into a clean jar. Immerse the jar in warm water overnight -- you can use a small insulated lunchbox or picnic cooler).
- Demonstrate the uses of yogurt for skin and hair care. Yogurt adds oils and enzymes to the hair and skin, closing pores and softening skin. Ask for volunteers to use yogurt on their skin for two weeks and record their reactions. Yogurt has a reputation for easing itchy scalps, acne and dry hands and face. Ask someone with an itchy scalp to apply yogurt to his scalp several times each week and leave it on for 15 minutes wrapped in a towel before rinsing it off. Find a volunteer with acne who will treat her acne for a week with a yogurt rub. Offer other individuals a chance to participate in the science experiment by rubbing chilled yogurt and lemon juice into their hands and nails. Record each person's summary of how they perceive the yogurt treatment.
- Experiment with different types of milk to determine from which types of milk you can make good yogurt. Make yogurt with sheep's milk, goat's milk, soy milk, rice milk, almond milk and others. Record the results.
