- Peanut butter and banana on whole wheat bread offers more fiber and fruit than its cousin, peanut butter and jelly on white bread. You don't need to buy expensive artisan-quality whole grain bread; your basic grocery store loaf is sufficient. Spread peanut butter on one slice of bread and lay thin slices of banana on the other before merging the two slices.
- Mix 1 tsp. of low-fat mayonnaise into an inexpensive can of tuna fish. Spread the mixture onto two slices of whole wheat bread. Slice the sandwich down the middle for easier handling. You also can use 1 tsp. of low-fat ranch dressing instead of mayonnaise and pair it with some whole wheat crackers. For a young child who's used to eating skinned fruit only, pack a skinned sliced apple along with the sandwich.
- Spread peanut butter inside the celery groove and lay raisins on top. Wrap each celery piece in plastic wrap to keep the peanut butter from smearing. Place the plastic-wrapped "ants on a log" inside a hard, sealed container so the other items won't accidentally crush the celery. Add a low-fat cheese stick and some whole wheat pretzels.
- Mash a hard-boiled egg with a fork and mix in 1 tsp. of low-fat mayonnaise. Spread the egg salad on two slices of whole wheat bread and wrap the sandwich in tin foil. Pack a small bag of peanuts and raisins along with the sandwich, or add a banana if the school prohibits peanuts in the lunchroom.
