It has been suggested low levels of vitamin D make for higher levels of blood fats, which can clog up blood vessels, including those that supply blood to the heart muscle.
In January 2014 the Journal of Diabetes and Metabolic Disorders reported the results of an Iranian study on vitamin D and blood fats.
One hundred and eight Type 2 diabetics were tested.
It was found:
- the diabetics with the lowest levels of vitamin D also had the highest blood fats, and
- the level of blood fats decreased as the amount of vitamin D increased.
A few minutes of sunlight each day without a sunscreen will allow your skin to make vitamin D (and it's also good for psoriasis and acne).
Vegan foods containing vitamin D include mushrooms and plant-based milks.
- mushrooms are low in calories and tasty, so chop some up into your salad.
One serving of mushrooms can provide all the vitamin D needed for the day. - soy milk, rice milk, and coconut milk are sources of vitamin D.
A cup of soy milk with added vitamin D provides 25 percent of the recommended daily allowance (RDA) of vitamin D, with only 100 calories.
Rice milk with added vitamin D also provides 25 per cent of the RDA of vitamin D, with 120 calories.
A cup of coconut milk, with only 80 calories, supplies 25 to 30 per cent of the RDA for the vitamin, the amount varying somewhat with the brand.
Fortunately, vegan pudding is possible.
